New recipe adapted from @12_tomatoes so delicious. To stick with the FASTer Way lifestyle of limiting dairy and gluten I substituted flour and half-half. I used coconut flour and soy milk.

I usually cook new recipes when Kenny is at the firestation. I try to decide if this will be a keeper. Well, I thought it was. I was skeptical about the coconut flour, after all I had read about how absorpant it was. I did increase the chicken broth by 1 cup- not needed the chicken juices kept the moisture up. I kept the amount of soy milk and the coconut flour the same as the original recipe. I also increased the baking time to 45 minutes. I used bone in chicken thighs.
Today for lunch guess who got to try this!!! I did not tell him of the substitutions. He reports it tastes pretty good. He also indicated he wasn’t sure how much healthier he can be with these changes. He added in cheese when he warmed it up. I forgot to let you know I deleted the cheese. He has started practicing the FASTer Way lifestyle with me. Happy to say his belly is shrinking.
We practice intermitten fasting (IF) and carb cycling. It took him a while to get to IF without complaining, but now he’s a pro. This meal is definitly a keeper with our carb cycle schedule.
