This chicken taco recipe was one of my first freezer, dump meal prep recipe I tried. Here is the original recipe: chicken tacos.
It is so simple to make. It also makes alot depending on how much meat you add. I started using chicken breast as the recipe called for, but found it to be somewhat dry. I changed to chicken thighs and have cut the time down to 4 hours. Definitely check your meat temperature to ensure it is done. Chicken is done at 165 degrees on the meat thermometer. One sure way to know it’s done is it will shred easily with a fork.
When you are meal planning and are looking for recipes that are easily manipulated this is a good one. What do I mean when I say “manipulated”? I am looking for a recipe that I can manipulate the carbohydrate. I practice carb cycling with my FASTer Way To Fat Loss® program. One days when I need to eat low carb I can easily omit the corn tortilla shell and go for the large tacos salad with the healthy fats added: avocado, olives and sprinkle of cheese. While my family still enjoys the carb!! You notice I made nachos today with pork rinds. So good.
