Jenny’s Spinach Salad

This salad is an easy salad to make for a large group of people and it’s not just a bag salad. My mother-n-law Jenny, serves this when she has us over for dinner with gumbo. It is one salad where Kenny will eat ranch dressing


  • 1 pound of bacon cooked to crumble
  • 6 boiled eggs peeled and cut up
  • 1 16 ounce container of Spinach
  • 1 can of peas drained
  • 1/2 cup of parmesan cheese or feta (can omit)
  • 1/4 of purple onion diced
  • 1 cucumber diced
  • 1 cup shredded carrots
  • Ranch dressing to toss salad


  • Wash and dry spinach. Dump into large serving bowl
  • Cook bacon to crumble into salad
  • Boil eggs and peel cut up to put into salad
  • Drain 1 can of peas put into salad
  • Add onion, carrots and cucumber
  • Pour about 6 tablespoons of ranch dressing ontop of salad and toss with salad tongs. You may have to add more ranch if all of spinach is not covered.
  • Refrigerate until ready to serve.
