Meals for Moffett-Vegan Week Feb 3

Ok, this is normally posted on Monday. I do apologize, but it has been a busy week and I am learning a new way to eat this week. So this also means I am learning a new way to cook or really I don’t know the recipes.

My VIP FASTer Way To Fat Loss is doing a vegan challenge. I like new things and get bored with the same old meals, so I went all in this week mentally.

I started preparing my menu Saturday and by Sunday I was arguing with myself. My family will be kicking me to the curb or ordering take out. They will not eat all the bowls and salads. So, I ditched the menu and started over.

I went through all my FWTFL meals and rearranged the dinner meal. Everyone is on their own for breakfast and lunch. Kenny and I practice intermittent fasting 16/8, so we break fast around noon to 1pm, when he is not a the fire station.

Not being vegan I had to go my favorite place to waste time, Pinterest. How many of you pin great ideas, recipes, crafts and so much more and then forget they are there? I do all the time. This week however I actually used the pins I pinned. You can visit me on Pinterest to see the different meals and recipes I have tried or want to try.

This week don’t be afraid to try something new. Even if it is only one meal or one new food. You may find out you actually like tofu.

Monday: Venison chili and vegan chili . I used the same seasoning for both but used Dear Crissy’s Easy vegan chili recipe  for meat substitutes. Kenny tried the vegan chili and said it was good. He liked the corn in it.

Tuesday: Since Tuesday is over with, I froze the meat for the rolled cabbage that was scheduled and we had leftover chili. The idea for the vegan rolled cabbage was to use lentils. I did add a protein packed salad to go with our chili.

Wednesday: Today we are having venison hamburger patties with mashed potatoes and gravy. I will be making a chickpea hummus burger for my plate. Thursday: Keeping it simple with Red beans and Rice. I will not eat the sausage, but will add in hemp seeds or chickpeas. Trick to releasing the gas from your beans soak them, even canned beans, for about 30 minutes. Add 1/4 tsp of baking soda after cooking to entire pot, not your bowl, and watch the volcano of gases start to release. You can keep adding a little baking soda until there are no more bubbles.

Friday: Kenny’s at the fire station so we are trying something new. Crunchy Thai Peanut Quino Salad. We love peanut butter around here.

Sunday: Enchiladas. Kenny makes the best ever. He usually cooks a variety of beef, chicken and now he will need to learn bean and tofu. Recipe for Kenny’s enchiladas coming soon. Here is the recipe I will be using for the Vegan Enchiladas. They look delicious.
