I am getting ready for the week with some simple and budget friendly meals. When I say easy, it means out of a can and into a pot easy. So all my peeps who say they can’t cook this week is your week.
I don’t know about you but I am tired. Not even sure why. Saturday we had a feast day in the FASTer Way, this fit perfect into our road trip to my moms.
I do love coming off a special holiday (Mother’s Day) weekend filled with fun food and family. In the FASTer Way one of our mottoes is memories over macros. I find more control mentally and physically knowing when, what, and how I will be eating each week.

Monday We are starting simple, simple, simple. Open and rinse some beans, saute some onion and sausage. Add in some chicken broth, spices and beans to onion/sausage. Boil then dump in spinach. My go to easy peasy Greens, Beans and Things.
Tuesday– still simple. Brown some ground turkey or beef. Follow directions of add in taco season and water. Simmer for 10 minutes. Serve your way with taco shells, flour tortilla shell or over salad mix. Low carb today, so I will be going with the salad and 1 tostaoda shell. Plan those carbs right and you can have 2. Add in your side or avocado .
Wednesday – Buy frozen turkey burgers. I love the Kroger brand. Take out of box and cook on med heat in skillet till done. You can also grill these straight from freezer, no thawing. Bake frozen sweet potato fries per instructions on bag.
Friday – Not cooking. Plans for taking dogs to the vet and dinner on the beach with Kenny.
Saturday – Chicken strips. mashed potatoes and green beans. This one is a little more complicated, but you can do it. Hopefully you have the day off. For the green beans, I buy canned. Drain off water and put 1/4 stick unsalted butter in pot, dump green beans in and cook till hot. Add in salt and pepper to taste.
Sunday – Fasting today, so we will have a light meal of Chimichurri Chicken and jasmine rice. Chicken is made in the crock pot and the rice is Uncle beans 90 seconds microwave steamer bag. Add a bag of mixed salad greens and you have a well balanced dinner.
