Home this week from a week of travel, Valentines meal and treats, plus Mardi Gras weekend. I am ready to have a plan in place that we all can follow as a family that is on the go. I will still be doing my FASTer Way To Fat Loss vegan challenge meals with the regular meals.
I am using vegan meals I find on Pinterest and adding in meat when I can for my family. When it is a meat based meal I am substituting tofu or beans for me. Trying not to over complicate my life with this type of living.

Monday: Trying to use up the produce I did not cook last week, so it is Stuffed Bell Peppers. I will make mine with this vegan Stuffed Bell Pepper recipe.
Tuesday: Who can turn down Taco Tuesday. Changing it up a bit and will be adding Black Bean Tacos with Avocado lime sauce to taco night.
Wednesday: Kenny goes to the fire station today so it’s time to try a new recipe. Sweet potato pea salad and Vegan Zuppa Toscanna Soup
Thursday- no one is home so it is left overs
Friday: Chicken pot pie (recipe says turkey, but you can use a rotisserie chicken) for the family and will make a small chickpea pot pie.
Saturday: Leftovers again, or we are eating out.
Sunday: Pork roast, sweet potatoes and green beans.
