Pork Chops and Rice

This was mom’s go to meal for quick and easy.  I cooked this regularly when my kids where growing up.  I stopped cooking it when I kept drying out the porkchops.  The key is to make sure you have enough water when cooking.

You can make this as rice only or add the meat (chicken or pork chops) to the top – your choice.

Ingredients

1 can cream of mushroom soup

1 can cream of chicken soup

1 envelope of onion soup mix

1 ½ cup uncooked rice

1 ½ -2 soup cans of water

Directions

Spray a 2-quart casserole dish with nonstick spray.

Mix onion soup mix with the rice in casserole dish.

Add soups and stir well.

Slowly add in the water and stir till well blended. This is the tricky part, you may need more water.  You want the rice to have plenty of water to cook, but you don’t want the meat to sink.  Think of the texture of runny oatmeal.

Lay meat on top the mixture if you are doing the meat.

Season met with your choice of seasonings.

Cover tightly

Bake at 350 degrees for 1 hour
