Quinoa Protein Energy Bites

The original recipe came from Pampered Chef. I have changed the recipe up by adding in protein and walnuts. These little bites are delicious, but you need to know your serving size.

Each bite has 252 calories. Carbs 30, Protein 7, Fat 13. This is a snack. Make it a meal with 3. The meal gives you 756 calories. Carbs 90, Protein 21, Fat 52. These protein bites will help you hit your macros quickly, especially your carbohydrate. Practicing the FASTer Way To Fat Loss we carb cycle and we eat whole foods. When I say we eat, we eat. I have gone from eating 1,000-1,200 calories a day to eating 1940 calories a day. Which means I need to eat at least 72g or carbs, 21g of fat and 40g of protein with each meal.

Ingredients:

  • 3/4 cup of uncooked quinoa
  • 2 cups of instant or quick oats
  • 2/3 cup of sweetened coconut flakes
  • 1/2 cup of miniature semi-sweet chocolate chips
  • 3/4 cup of peanut butter
  • 1/3 cup of honey
  • 1-2 scoops of vanilla protein (chocolate would be good too)
  • 1/2 cup of chopped fine walnuts

Directions:

Over medium heat toast quinoa in a sauté pan till slightly browned.

Chop your oats, chocolate chips and walnuts, each separately in your manual food processor. Then dump into a mixing bowl.

Add in your peanut butter, honey and coconut flakes. Using a pampered chef measure-all cup works wonderful with the peanut butter and honey. Measure liquids and solids up to 2 cups. A unique adjustable plunger design cleanly ejects solid ingredients.

Add in your protein of choice and mix well.

Scoop comes in small, medium and large

With your pampered chef medium scoop, scoop out and press against side of bowl to flatten and place on a cookie sheet. You can either let the balls be as they are when they come out of the scoop or you can roll them into pretty round balls. I like quick and easy, so I leave the bites as they are.

Refrigerate for about 30 minutes.

These last 4-5 days in the refrigerator.
