Red Earth Cake

Viola Murphy (Granny)
Oven 350 degrees for 30 minutes or when cake tester comes out clean
3 Tbs cocoa
1 tsp vanilla
1 tsp red food color
In a large bowl combine these three ingredients with enough strong hot coffee (coffee not the grounds) to make a thin smooth paste. Set aside.
Cream 1 1/2 cup sugar and 1/2 cup Crisco. Add 2 eggs and mix well. Add to above cocoa mixture.
In a separate bowl mix 2 cups of cake flour and 1 tsp soda. Granny wrote on her recipe card this cake is best if you do not use a mixer. If you use a mixer it will be hard as a rock.
Alternating flour mixture and 1 cup of buttermilk a little at a time to the sugar/cocoa mixture.
Pour into a 13×9 cake pan or two 9″ round cake pans that have been greased and floured. (non stick cooking spray works)
When done let cool on wire rack. Then icing.
Red Earth Cake Icing
1 box of powder sugar and 3 Tbs cocoa -sifted
Add 1 tsp vanilla, 1 tsp red food color, 1 stick of butter to powder sugar/cocoa mixture. Cream together with 3 Tbs hot coffee. Mix with coffee until icing has spreading consistency.
