Broccoli and Rice Casserole

This recipe is from my mom.  One of the best and ok, unhealthy ways to eat rice and broccoli.  But we only have this one during the holidays, so I do not stress about it.  For one, I eat healthy most every day of the week throughout the year, except leg day.  Then I make sure to have a special treat.

Go into the holidays enjoying your family and not stress about what you eat.  Stop eating when you are 80% full and stay hydrated.


1 family package of chopped broccoli

1 can cream mushroom soup

1 can cream of chicken soup

1 medium jar of cheeze whiz

2 cups of cooked rice


Cook rice per package.  I use boil a bag – so easy.

Cook broccoli per package. I use microwave large steamer back – easy. You may have to chop up the broccoli once it is cooked, if it is not already chopped.

Spray 2-quart baking dish with nonstick spray.

Pour in cooked rice, broccoli, soups and cheeze whiz into baking dish.

Mix well

Bake covered at 350 degrees for 30 minutes
