Baked Berry Oatmeal

Breakfast is served

Do you find yourself at the end of the week with fresh produce that may not make it till next week? When I do, I turn them into freezer packs for smoothies or make this delicious warm and gooey breakfast. I found this recipe on IG from Brittany Mullins @eatingbirdfood. I did not have any coconut, so I chopped up some pecans. As I was smoothing out the oatmeal I kept thinking of the oatmeal cookies we used to make with chocolate and peanut butter, so I tossed on some white chocolate chips. It was leg day so and little extra will not hurt.

Ingredients

2 bananas 1cup almond milk

2 cups oatmeal Sprinkle of cinnamon

2 Tbsp. chia seed 2 cups of your favorite berries

Coconut or pecans for topping

Optional-sprinkle in chocolate chips for a little sweetness

Directions

Preheat oven to 350 degrees

Mash up bananas in the pan you will cook in

Add in all ingredients except berries and topping

Mix oatmeal and other ingredients well. Smooth out in bottom of pan.

Sprinkle berries and toppings on top of oatmeal

Bake for 30 minutes. Let cool for 5 minutes before cutting.

Drizzled with some almond butter (peanut butter) and enjoy.
