Sweet Potato Waffles

My leg day treat was waffles with syrup. In the FASTer Way To Fat Loss, we do not deprive ourselves of treats or sweets. We allow for the fun food. I was following the meal plan from the the FASTer Way yesterday and was delighted to see a waffle recipe.

The recipe was not making sense to me, 2/3 an egg??? and also no liquid or milk??? So you know me let’s make our own. Here it is. It reminded me of fall.

Ingredients (makes 2 waffles)

1 medium Sweet Potato
1 Egg 1/3 cup almond milk
2 Tbs Maple Syrup
1 tsp Vanilla Extract
1/3 cup Almond Flour (plus 1 scoop of vanilla protein powder optional)
1 tsp Baking Powder
1 tsp Cinnamon

1 tablespoon of walnuts (optional)

Directions

Cook sweet potato in oven for 45 minutes at 400 degrees or you can peel, cube and boil in water till done.

When sweet potato is done add to blender along with all ingredients. Add milk in last. You may need to add more or less depending on the thickness you want your batter.

Spray and preheat your waffle iron. Cook about 5 minute or until done.

Top with your favorite toppings -honey, syrup, butter,
