Coming off a 3 day weekend and the holiday was on Monday, kind of put me behind. Even though I had the house to myself yesterday I found stuff to do besides prep for my week of meals and content.
I did enjoy gardening and a movie. This weeks meals I planned out and took care of the shopping early Friday morning before our little Island became inundated with tourist enjoying the beach.
We enjoyed our weekend with an evening fishing trip and a small fish fry with all the trimmings. The way Kenny and his mom cook our fresh seafood has us spoiled when we actually go out to eat. Needless to say, we usually do not go to seafood restaurants.
Monday– We had chicken kabobs with peppers, squash and onions. I baked in the oven for about 20 minutes on 400. Seasoned with Uncle Chris steak season. Added this to Jenny’s Spinach salad.
Tuesday– Spaghetti Squash with meat sauce and broccoli
Wednesday – Bean, Sausage and Rice
Thursday– Fish and Fries with coleslaw. We like the coleslaw kits you find in the produce. I believe it’s Dole.
Friday –Chicken broccoli casserole -dairy and gluten free. This is a new recipe. I will let you know how it turns out.
Saturday – Up in the Air
Sunday– Sushi Bowl
